Valencia (EFE).- The Peruvian restaurant Central has become number 1 on the list of “The World’s 50 Best Restaurants” this Tuesday, which has celebrated its twenty-first edition in Valencia, and in which the Barcelona Disfrutar has risen to number 2.
Led by chefs Virgilio Martínez and Pía León, Central went from second to first position on this list, which placed Disfrutar at number two; in the 3rd to DiverXO (Madrid) and in the 4th to Asador Etxebarri (Atxondo -Basque Country-).
Central replaces the Danish Geranium in this position, which leaves the classification to join the “Best of the Best” hall of fame of former number 1 restaurants, where the Spanish El Bulli and El Celler de Can Roca or the French Mirazur were already present. .
Both Disfrutar and DiverXO have risen one place in this ranking, as revealed at the gala held this Tuesday at the Palau de Les Arts in Valencia, where Asador Etxebarri has also improved its position, going from sixth to fourth place.
However, the Spanish restaurant that has climbed the most on the list has been the Valencian Quique Dacosta (Denia -Alicante-), which has entered the top 20, going from position 42 to 20.
Elkano (Getaria), for its part, has dropped from sixth place to 22nd, and Mugaritz (San Sebastián), whose chef Andoni Luis Aduriz has received the “icon award”, has fallen from 21st to 31st.
In addition, Miguel Ángel Millán, from DiverXO, has won the award for best sommelier, an award established last year, when Josep Roca, from El Celler de Can Roca (Girona) won it.
Six Spanish restaurants
Spain adds, therefore, six restaurants among the 50 best in the world -Disfrutar, DiverXO, Asador Etxebarri, Quique Dacosta Restaurante, Elkano and Mugaritz- the same as in 2022.
The list of the “top 5” is completed with Alchemist (Copenhagen), at number 5, a restaurant that has also received the hospitality award.
In sixth place has been the Peruvian Maido (which rises from 11); in seventh, the Italian Lido 84 (which climbs one position), and in eighth, Atomix, from New York, the restaurant that has climbed the most on the list, where it was ranked 33rd.
At number 9, the Mexican Quintonil repeats, and in tenth place Table, from Paris, entered the list of the “50 best” directly into the “top 10” for the first time.
“It is important for Latin America to have this visibility”
Chef Virgilio Martínez, from Central (Peru), has highlighted the visibility that recognition like this offers Latin American gastronomy.
In the press conference after the gala in which the list of the 50 best restaurants in the world was announced, Martínez and his partner Pía León were happy and content with this award, although they have also transferred the responsibility supposed to receive it.
After learning that Central was number 1, Martínez has stated that it is not about being the best or competing with other restaurants or chefs, but about continuing to do what they love and seeking the truth, although he has also indicated that he is comfortable in this position.
“We represent a territory, a diversity and a culture”, has assured this chef, who has recognized that this award is important for Peru and for Latin America, in general, due to the visibility it gives to its gastronomy, but also to its culture and its art.
